In 2010, born and raised Austinite, Bryce Gilmore opened Barley Swine with a commitment to support regional farmers and ranchers by utilizing the fruits of their labor in every single dish we serve. 

Our continually changing menu is inspired by ingredient availability and the aspirations of Bryce Gilmore and his band of chefs. We strive to be creative and have fun in the hopes our guests will also share in our excitement. Barley Swine is a place to celebrate the love of food and drink by gathering with friends and family for a unique dining experience driven by the hospitality and passion of our staff. We take great pride in the values which guide our operation, and we hope to continue growing and supporting the local food community. 

 

River Field Farm

Over the years, we have gathered and sustained many treasured relationships with the best farmers in and around central Texas. Our dream was to one day start our own farm endeavor and walk the walk of the trade. In 2023 that dream came true. Bryce along with Farmer Phil Green founded River Field Farm with the goal of using 100% of what he grew to supply his restaurants. Located in Dale Texas, Bryce and Co. are tending to just over an acre of land. Everything is grown from seed, planted and harvested by hand, all while practicing organic techniques. We now boast the unique honor of featuring several seasonal vegetables from River Field on the Barley Swine Menu fulfilling our dream and passion for being a true farm to table restaurant.
